With so many amazing fruits to choose from in the Pacific Northwest, it’s hard to pick which ones to use for our seasonal flavors, but we knew that apricots would make an incredible late-summer fruit sorbet. To intensify the flavor of the apricots our chefs and ice cream makers turn all of the organic apricots we get from Collin’s Family Orchard into a sweet-tart jam before spinning into a sunny-orange sorbet. Collin’s Family Orchard is a 4th generation farm in Selah, WA, organically growing a variety of different delicious tree fruits, like apples, peaches, and apricots.
